Breakfast Pancakes

Making pancakes can be great for your little one as they can explore various textures. Pancakes can be served as a cereal when served with loads of fruits.

Ingredients

  • 125g self-raising flour (for gluten free use gluten free flour with 1 tsp xanthan gum)

  • 1 banana, mashed

  • 1 tsp baking powder

  • 150ml oat or soya milk

  • ¼ tsp vanilla

  • 4 tsp sunflower oil for frying (non-stick pan can be used with no oil)

  • Piping bag for piping the pancake mixture to the pan

METHOD

  • Put the flour, baking powder, mashed banana, milk and vanilla extract in a bowl and mix thoroughly

  • Place a large non-stick pan on medium heat 

  • Add oil and wipe around the pan carefully with a heatproof brush

  • Once hot, pipe the pancake batter on to the pan; cook for a few seconds or until bubbles are popping on the surface and flip over 

  • Cook on the other side until light, fluffy and pale brown

  • Transfer to a plate and keep warm

  • Serve with berries and toppings appropriate for your little one

Note: Can be served with whipped dairy-free cream. Oat-based and coconut cream are great too. Agave nectar as a topping is a natural and healthier source of sugar rather than a syrup.
