Breakfast Pancakes
Making pancakes can be great for your little one as they can explore various textures. Pancakes can be served as a cereal when served with loads of fruits.
Ingredients

125g self-raising flour (for gluten free use gluten free flour with 1 tsp xanthan gum)

1 banana, mashed

1 tsp baking powder

150ml oat or soya milk

¼ tsp vanilla
-
4 tsp sunflower oil for frying (non-stick pan can be used with no oil)

Piping bag for piping the pancake mixture to the pan
METHOD

Put the flour, baking powder, mashed banana, milk and vanilla extract in a bowl and mix thoroughly

Place a large non-stick pan on medium heat

Add oil and wipe around the pan carefully with a heatproof brush

Once hot, pipe the pancake batter on to the pan; cook for a few seconds or until bubbles are popping on the surface and flip over

Cook on the other side until light, fluffy and pale brown

Transfer to a plate and keep warm

Serve with berries and toppings appropriate for your little one

Note: Can be served with whipped dairy-free cream. Oat-based and coconut cream are great too. Agave nectar as a topping is a natural and healthier source of sugar rather than a syrup.
