Pasta and Spinach

Pasta is a quick and easy fix for your little one’s lunch or dinner. It can be flavoursome, rich and full of yummy goodness and with the different shapes, fun! For this recipe, I have used spinach. As your little one grows, they are attracted to colours – the green of the spinach makes it an appealing and enjoyable meal.

Ingredients
  • 300g gluten free, egg free pasta

  • 1 onion, chopped

  • 400g fresh tomatoes, chopped (1 tin of chopped tomatoes can be used)

  • ½ clove of garlic, chopped

  • 150g spinach, chopped

  • 1tbsp olive oil

  • 100ml chicken stock

METHOD
  • Place a saucepan on the hob at medium heat

  • Add olive oil to the pan and heat for 1 minute

  • Add the chopped onion and garlic, sauté briefly

  • Add the chopped tomatoes, bring to a boil and reduce heat so the sauce can simmer thereby reducing volume and increasing tomato intensity

  • In another pan, add the pasta to boiling water, bring to a boil and cook until tender

  • Drain the pasta and pour into the tomato sauce and allow to simmer for 5 minutes

  • Add the chopped spinach and remove from the heat

  • Enjoy with your little one
